Next Generation Alice In The Oven

This recipe was a favorite of mine growing up.  It is basically a German pancake, but our family’s recipe has a fun name! This is a fluffy, thick pancake, with the consistency of flan.  I renovated the recipe by making it relevant for today’s health conscious movers and shakers.  The outcome is just as delicious as the original, and a whole lot lighter! The best of both worlds.  This is a great recipe for a lazy Sunday! ~Caydie

Ingredients:

1 cup whole wheat or oat flour

2 Tbsp honey

4 egg whites and 2 whole eggs

2 cups vanilla flavored almond milk (or soy)

1 tsp vanilla

1/2 tsp salt

1/2 cup apple sauce

Method:

Mix all ingredients together and pour into a 10-12″ cast iron skillet.  Place in the oven at 350 degrees. Bake for 20-25 minutes or until the top is a nice golden brown.  Enjoy with maple syrup or berry compote!

Yeilds:

About 6 servings.

      Alice in the Oven! hahaha, I think before it was Annie in the oven….. but Caydie would know better.. I think the story is Alice is a golden retriever, and the color of the top of this when it bakes is the color of the dog… :) silly, I know.
